Locally smoked salmon and plump prawns, set on Dorset leaves with tomato mayonnaise and lemon chutney

An ice chilled ring of honeydew melon, topped with spring berries and a rainbow of citrus water ices
A ROULADE OF DUCK
A coarse duck pate rolled within Dorset back bacon and carved onto a savoury apple and bramble sauce

Creamy leek soup swirled with saffron and potato soup, finished with toasted sippets

Prime Wessex topside, hand carved and served with Yorkshire puddings, horseradish tartlets and pan gravy
